This is our signature dish that takes 48 hours to make from start to finish. We make our broth using only whole chicken wings for a purer chicken flavour we add our UB 24 seasoning that is a blend of two types of soy, Katsuobushi, nibushi, sake, mirin, shiitake add to this 24 hours cooked onion, garlic and ginger and you have an umami bomb. We top this pork shoulder chashu, a smoked tea Tamago egg and spring onion and of course serve fresh handmade ramen noodles.
